Onion Pickle

Onion Pickle
2 large onions, finely shredded
8-10 bird’s eye chillies, finely sliced
2 kaffir lime leaves, finely shredded
1 Tbsp shredded ginger bud flower (bunga kantan)
1 tsp shredded lemon grass
Seasoning
1 tsp salt
2 Tbsp castor sugar
1 Tbsp vinegar
Mix onions and all shredded ingredients with salt, sugar and vinegar. Toss well to mix, then put into an air-tight plastic container. Refrigerate until ready to serve. Makes a beautiful appetiser.
